You’ll have no shortage of top-notch restaurants when you visit Colorado. From Denver to Boulder to Aspen, the prestigious Michelin Guide unveiled its inaugural selection for Colorado, honoring chefs and restaurant teams across 44 establishments. So, what restaurants should you consider on your next trip to Colorado?
The Michelin Guide awarded five one-Michelin-starred restaurants, including Beckon in Denver, Bosq in Aspen, Brutø in Denver, Fransca Food and Wine in Boulder, and Wolf’s Tailor in Denver.
Beckon is an intimate 18-seat restaurant that releases menus in concurrence with the four lunar seasons. The current menu is available between April and June.
Over in Aspen, Bosq, established in 2016, offers innovative and inspired cuisine from local farms, mountains and streams. Menu highlights include forest broth with black truffle gougères, Nordic Oscietra caviar, Sauternes-cured wild steelhead trout, roasted duck breast with mountain berries and hazelnut, and diver scallop with smoked char roe and Swiss chard.
Other Colorado restaurants making the Michelin Guide include Bramble & Hare, located in Boulder. This Michelin Green Star recipient is stocked by its sister, Black Cat’s organic farm, to serve up three-course dinners, craft cocktails and wine in a charming dining room. For meals, think tomato tart, butternut squash soup, pan-seared salmon, chorizo-stuffed quail, carrot cake and vanilla bean cheesecake.
Also in Boulder, Frasca Food and Wine invites guests to order from its quattro piatti or friulano menus. Highlights include pork belly with green garlic, sauerkraut and nutmeg; duck ragu with foie gras and 36-month parmigiana Reggiano; scallop with farro verde, lobster zabaione and salsify; and wagyu beef with sprouting cauliflower, lardo, aged balsamic and sultana.
In Denver, Wolf’s Tailor offers both small and large dishes, from piada bread with eggplant to paccheri with prawn, octopus, corn and squash. For larger meals, consider Colorado wagyu with garlic, balsamic and sugarloaf; or pheasant with tomato salad, salsa verde and hazelnuts.
The Michelin Guide showcased many other tasty Colorado restaurants, including The Penrose Room in the historic Broadmoor Hotel in Colorado Springs, Rootstalk and Radicato in Breckenridge, Bin 707 Foodbar in Grand Junction, 221 South Oak in Telluride, The Periodic Table in Steamboat Springs, Tocabe in Denver, and Mawa’s Kitchen in Aspen.
