Hotel Metropole Monte-Carlo Debuts New Fine-Dining Restaurant

Les Ambassadeurs by Christophe Cussac officially opens its doors at Hotel Metropole Monte-Carlo, positioning the restaurant among the most coveted culinary destinations not only in Monaco but also across the French Riviera.

The restaurant pays homage to the original “Les Ambassadeurs” restaurant present at the property in the 1920s. This original dining outlet soon became a staple among locals and the hotel’s revolving list of celebrities, diplomats and aristocrats.

Now, the new restaurant features elegant and contemporary Mediterranean cuisine inspired by Cussac’s own culinary heritage. The menu, carefully designed by Cussac over the course of two years, follows his self-proclaimed Cussac Style or approach of the “three flavors per dish.” This allows Cussac to respect the overall balance and ingredients of each plate, with highlights including sea bream tartare and caviar cannelloni, lobster lasagna with delicate notes of tarragon, and marinated sardine with caviar and lemon.

Guests can indulge in these Mediterranean-inspired dishes in a dining room featuring bronze, ivory and gold-hued tones. The restaurant also features La Table du Chef, offering guests a 360-degree view of Cussac and his team hard at work. To top off the restaurant’s amazing features, an all-glass wine cellar housing vintage bottles and a den of sweet treats also comprise the dining experience.
