I was on my way to attend World Travel Market in London when I flew Air Canada’s business class from Toronto. On the way, I had the pleasure of dining in the Air Canada Signature Suite restaurant, reserved for Air Canada Signature Class travelers on their way to Europe, Asia and South America. The restaurant serving the á la carte menu is quiet and calm, appointed with grey tones and earthy wood. I had to rush because my flight arrived late, but the entire staff made me feel at home.
Once seated, my server made recommendations regarding the menu and wine to pair as I enjoyed each course. I happily agreed to the recommendations and began my meal with a lovely salmon tartare topped with caviar and crème fraîche. Light on the palate yet bold with flavor, this starter to my meal was a delight.
The next delicacy I enjoyed was the butternut squash risotto. What an autumn treat! Topped off with a delicious glass of white wine, it was filling in the best possible way.
I continued on my culinary tour to the main course, a wonderful beef dish accompanied by various root vegetables and potatoes — elegantly plated and almost too beautiful of a composed plate to eat. This was also time to move on to a red blend that accompanied the beef entrée perfectly. Throughout my entire experience, the staff was attentive, they answered questions and made sure I enjoyed my meal in a timely fashion, appropriate to accommodate the need to board my flight.
I managed to save enough room to sample one of the featured desserts, an inventive meringue with toasted coconut shavings, pomegranate seeds and fresh lime. I chose a Slone peppermint tea to sooth myself prior to boarding my flight.
Overall, my experience in the Signature Suite’s á la carte dining restaurant was excellent, and the menu offers a selection to fit any traveler’s dietary needs or wants. The atmosphere, staff and dining will certainly have me back. ’Til next time, Toronto!
