As the seaside signature restaurant of the new Corazón Cabo Resort & Spa, Aleta’s menu features a mainly ocean-to-table menu, including a sushi and raw bar, which offer a variety of local clams, oysters, ceviche and made-to-order sashimi and rolls. Fitting when you’re dining on the beach, right? The menu also offers exceptional traditional and fusion dishes for breakfast, lunch and dinner. Think huevos rancheros, tuna crackling tostadas, octopus carpaccio, gratin prawns and more.
Recently appointed Executive Chef Eric de Maeyer oversees all concepts at Corazón Cabo, including Aleta Restaurant; Corazón Beach Club, a chic escape on Medano Beach and the only swimmable beach in the area; Rooftop 360, the tallest rooftop in Cabo; and all room-service dishes. Chef de Maeyer was born in Belgium and spent 20 years working in kitchens from Europe to Latin America. De Maeyer also served as a consultant for world-class restaurants such as Mazzarino, Le Crouton and L’Escargot Bistro Parisien.
This past April, Chef de Maeyer debuted an innovative menu showcasing his passion for Mexican food and culture. His goal is to celebrate the country’s diversified and rich gastronomy while acknowledging the local Baja cuisine.
I was pleasantly surprised when I learned I was one of the guests trying this menu for the first time and even more so when Chef de Maeyer walked me through the experience himself. My favorite dish of the tasting had to be the tuna crackling tostada mentioned above: fresh sushi-grade tuna mixed with red onion, cilantro, wasabi, sesame and soy sauce, atop a bed of avocado and, my favorite, the chicharron (fried pork crackling) tostada. Not only could I smell the freshness of each ingredient, but every bite of that dish also felt like a dance party in my mouth.
Aleta Restaurant is open to everyone, not just resort guests; there’s no excuse to skip it next time you find yourself in Cabo San Lucas.
