If the Negroni is your favorite boozy and stirred cocktail and you eschew Aperol for a Spritz made with its scarlet-hued Italian counterpart, a new bar has your tippling penchant in mind.
Camparino in Galleria, the bar in Milan’s Galleria Vittorio Emanuele, just opened an homage to the creator of the beloved Italian bitter liqueur in the space that used to be his laboratory. The newly launched Sala Gaspare is an ode to Gaspare Campari, who created Campari in 1867 and opened up Caffè Campari — a bar just opposite the new space.

In the 12-seat, reservation-only Sala Gaspare, guests can undergo a cocktail journey starting with historic recipes gleaned from vintage books in the bar’s library reimagined with contemporary ingredients. Loucien Gaudin from the 1929 book Cocktails de Paris Présentés by bartender Charlie, for example, stirs Campari with Bickens London Dry Gin, Grand Marnier Louis Alexander and 1757 Vermouth di Torino Extra Dry.
Next, sample drinks inspired by the ingredients and botanicals Campari used in his bitters, vermouths and cordials, like the spicy Peperone with Espolòn Tequila Blanco, Ancho Reyes Verde, coriander and tomato; or Rabarbaro, with Cordial Campari, Vetiver and rhubarb.
Finally, the journey culminates in the opportunity to sip classics like the Negroni and Boulevardier made with vintage spirits and bitters no longer produced, including Cinzano 1960 and Campari 1970. Drinks are served with small snacks from the kitchen team in a true nod to aperitivo hour.
